One of my favorite things in the whole world is having a BIG SALAD! Lol. It makes me laugh because I think about that Seinfeld episode with Elaine and her big salad skit. Priceless. She had it right though.
A big healthy salad, loaded with all your favorite stuff, makes you feel super healthy and satisfied. Especially when you create it at home and add your own homemade hemp salad dressing to it.
Its really up to you which type of greens you want to use and then what type of goodies you want to add to it. I love Arugula and spinach. Sometimes I get the mixed greens and I also love to use the greens with the mixed herbs. But here’s the thing. You can also buy dill and basil and add them into your salad. I love using shredded beets and carrots, zucchini and cucumber.
For extra protein you can also add any of your favorite nuts or seeds, making sure to soak the ones that are harder to digest due to their enzyme inhibitors. (Click here for more details on which seeds and nuts need to be soaked/sprouted) You can even a cut up boiled egg can be added to the mix. Make a big salad and leave it in the fridge. I find it lasts about 4 days.
- 1 x tub or bunch of Organic arugula or other greens
- 1 x sliced cucumber
- 1 grated beet
- 2 grated carrots
- 1 grated zucchini
- 1 x sliced avocado
- 1 chopped tomato or cherry tomatoes
Optional: 2 sliced hard boiled eggs
