This tasty cake is not only flourless but moist and delicious!  Drizzled with Almond Kefir, soaked Goji’s and homemade Apple Butter, these go great with an afternoon latte!

Preparation:

Preheat the oven to 325 degrees.  In a large bowl mix everything together until blended.  Line a baking pan with parchment paper or lightly oil it and add the batter.  Bake for 45 minutes or until the toothpick comes out clean!

Recipe:

1 cup cooked pumpkin (fresh or from a can)

½ cup homemade hemp seed butter

¼ cup maple syrup

1 ½ tsp baking powder

2 eggs beaten

1 tbsp pumpkin spice

1 oz coffee

¼ tsp salt

½ cup hemp apple butter
